How to decommission a bidet

Hello,
I would like to remove a standalone bidet (see attached photos) and cap/terminate both the water supply lines as well as the drain line. We're converting to a washlet and will be installing a linen cabinet in place of the bidet. Opening up the wall isn't an issue. Water supply lines (PEX) come from above and the DWV is ABS. This is in the lower level of the house and is on concrete slab.
Any advice would be greatly appreciated: particularly how to deal with the PEX as I don't have specialty PEX tools.
