I want to terminate my water supply line near the well downstream of the pitless. For now, I'll just connect hoses to fill water tanks. But, how do I prevent that portion of the line from freezing? Do I drill a weep hole in the riser under the pitless? Or is there a device that I can install on the connection past the pitless above ground similar to a frost proof spigot that will work? Thanks.

You want to install a "yard hydrant". Those are designed to drain into a gravel pit that you install, when you turn the hydrant off.
