Connecting an undersink water filter

I have a somewhat unique situation. There is an existing water supply under the sink with a 3/8" braided sink supply line connect to the stop valve. The stop valve is my only way of turning off the water - it is an apartment. I am trying to connect a water filter to provide softened water to an espresso machine. It has John Guest fittings on the housing.
Ideally, I would like to connect a short supply hose to the existing shutoff, and connect that to a dual stop valve so I have control of both water lines. Then I could reconnect the sink supply to one side of the stop valves, and somehow connect to the push-fit tubing for the water filter.
Any help on what to buy would be appreciated!
