I need to replace a pressure tank but upon reviewing the company that installled it did not create and unions for easy replacements in the future unless I’m missing something. What is the best way to go about this? I thought about cutting the 1.25 inch pipe leading to tank, then when I install the new tank put in a threaded union.

Cutting that pipe looks like the easy way to me. Hacksaw or cutoff wheel I would think.

Your replacement pipe would best not be galvanized. I might use PVC with threaded adapters, as is used on the connection to the right. I might use a PVC or CPVC schedule 80 nipple.

Looks like installing your new union could be tight.

You would not be needing to replace the tank if you had a Cycle Stop Valve. The CSV is designed to make the pump, tank, and everything else in a pump system last longer and work better. But of course that is why you won't here about or be able to purchase a CSV from any pump company. If you want things to last longer you have to figure it out for yourself as the people who make pumps and tanks are certainly not going to tell you about it.

Oh, and BTW, you only need a 4.5 or 10 gallon size tank with a CSV like this.
