I am sure my question is vague so any input is more than welcome. My dilemma...12 gallon holding tank emptied in less than a day. Nothing left on and no visible leaks. Any suggestions as what to look for?

Have checked the ground and under the house. No invisible leaks. No it does not seem to be refilling. The pressure is fine registering 60. However, I did notice the pump protector was humming for quite some time...did eventuaoly stop but it is warm to the touch. Have two wells tied into the system both with their own pump protector.

1200 or 12 gallons?

Have you checked your toilets to be sure the flapper isn't hanging up?
