Domestic Tankless Coil Gasket replacement & conversion

The oil fired gasket is overflowing with scale. Have well water. Coil and furnace only 5 yeras old. If I replace the gasket, is it probable that the coil will need to be replaced. If so, can I leave the old coil in and disconnect the hot water supply. Then use a stand alone electric tankless heater. That way I'm not dunning my oil furnace all summer to heat water for just 2 persons.
