I certainly don't want to have to rip open a marble wall in a few years for a problem with a valve from an "iffy" company.

Kohler & Moen both make good quality, reliable faucets. I installed a Kohler tub/shower faucet more than 15 years ago that has not needed to be repaired yet and the finish has held up fine, in a co-op apartment that I own. Kohler is not an "iffy" company, neither is Moen. Go with what you want.
