I'm neither a granite guy or a plumber, but I did install a couple of sinks to a granite counter. My granite fabricator used a router to make T-slots for some substantial T-bolts and nuts to hold the clips in place. If a clip came out, you need to determine what method the screw was being held into the stone. SOme people use an epoxy to hold a threaded insert in the stone, then you use a machine screw to hold the bracket/clip. Personally, I'd be leary of an expanding anchor - some granite has many small imperfections, and an expanding anchor could take out a chunk. I may be way off, I just don't know. All I can tell you is how mine are attached.

The calk should only be a waterseal, it does not hold the sink in place (although it does to a degree); the clips should be anchored well enough to be holding the sink in place.
