The simplest solutions are always the best! Many pop-ups lift out of the sink for cleaning, so she can lift it out, use the rubber plug, and replace the pop-up when she's done. You should be able to find the rubber plugs at any hardware or dime store.
Another solution that works is to close the pop-up and plop down one of those round rubber jar-lid-opener thingies over the drain...that will usually seal pretty well. Good luck.
