These pipes should be in the wall, so it does not matter what is in front of them.
Plumbing matters should be your first consideration in a kitchen or bath remodel. You need to make your remodel fit your existing plumbing or be willing to do whatever is necessary to do the plumbing correctly. It is always a bad idea to try and jury rig the plumbing. I would also recommend that you make sure that you get this permitted and inspected.
