I've replaced as much of the pipe with plastic as I could, but yet the smell is still pretty strong in the closet that has open access to these older pipes.

The exterior of drain piping does not give off an odor. The materials used to assemble cast iron joints (oakum) does have an odor but it is packed under lead in the hub of the joint.
You may have an open clean-out fitting, cracked piping or leaking fitting that cannot be seen. Have a professional check this for you if the odor is that nauseating.
