I use just a single wrap plus a little overlap. I tighten my gas lines as tight as I can with two 24" pipe wrenches. As far as anything else, just make sure you don't cross thread. Some plumbers don't like to use the tape, but I find the yellow works OK and is less messy. Of course, I don't plumb for a living, so the conviencence of the tape with worth something to me. When you finish and turn the gas on, use liquid dish soap and brush on a generous coating on each fitting any bubbles will indicate a leak.
