Converting to copper plumbing

I have a question regarding copper plumbing. I'm a do-it-yourself kind of person and have tackled all kinds of projects. I will be adding on to my home over the next few months (sub-contracting most of the work) but when it comes to plumbing I think I may be able to handle most of it. The issue I have is how do I convert to copper if I can't get all the way into the walls? I'd like to have copper running to the new area and change out everything at the same time but how can this be managed? I'm curious to find out how you guys do it. I guess if I must rip into the walls I must but what a pain it will be. The existing tub/shower is my biggest concern. Except for the sinks and shower, all of the pipes run into the attic space so this shouldn't be a problem. I'm sure there's a lot I don't know so I'm hoping you can help out.
