Just guessing, but you may have a mild water hammer problem. The new valve or nearby piping may not be as securely anchored as before, so it rattles or bumps against the wall whenever another faucet is shut off. Your description of the noise as a "click" doesn't quite fit however.
: A new shower valve was put in my shower. Now whenever I turn off the water on the second floor of my house, I hear a relatively load "click" coming from the valve. My contractor says it is normal, but it is very distracting and noisy. Anything to be done?
