Rob, I don't what Terry's advise will be on flex copper, but I wouldn't. I'd drill holes and solder fittings on short piece that I could slip through the holes. Worst case is if your joists are 16"oc, then over 8 feet you could possible have 6 joists to drill and 5 pieces of pipe to connect. If your joist are wider than 16" then there would be less. One of the joys of remodeling.
