The biggest advantage of plastic pipes is that they are very simple to work with. All you have to do is square cut the pipes where you want them capped, (hacksaw works well)deburr the pipe where it is cut, apply glue that is specific for your type of pipe on both the end of the pipe and inside the cap, (I'd guess it is CPVC)and immediately push the cap on the end of the pipe with a slight twist. Hold the cap in place for a few seconds then let the glue setup for a few minutes before turning the water back on. When you cut the pipe, leave enough pipe exposed so that you could cut the caps off and glue a coupler to the end and reinstall pipe if you ever change your mind and want the water back.
