Shortening Pipes

We recently removed a kitchenette from our basement. Our plan is to cut the remaining pipes and sealing them in the wall. The three pipes that remain are the hot & cold water and the drain. We live in a small townhouse, so the only water shutoff is right where it enters the house. Will anything be harmed by turning off the water at this point? Do I need to be worried about the hot water heater? Any suggestions on how to best cap off the copper hot/cold pipes?
