vanity base vs. sink size

I am putting in a 59" width vanity base with double undermount sinks. Questions: 1)If I do an 18" depth on the vanity (I have small kids), what is the max sink vertical diameter I can put in? I wanted to do an oval 17x14. 2)Is it wise to do an 18" or should I stick with the standard 21"? Thanks!
