You won't melt the solder at that distance, solder will melt if you are connecting fitting together, but this won't cause the joint to leak as long as you flow the solder into the joints. If you have a valve that is very close to the area you are heating, wrap a wet rag on the pipe next to that fitting. That will be enough of a heat sink to protect the valve. Remember though, the pipes will still be hot enough to burn you.
