What is going on? I am afraid we are getting sewer gas because of this one toilet.

Normaly, I expect the toilet to have a crack in the china allowing water to drain down the pipe. Since your toilet is left alone for a week at a time, maybe you have some helpful critters using that toilet as the local waterering hole.
