It sounds like pipes strapped tightly to the wood studs. Homes built with copper pipes, are more noisy than homes built with plastic pipes. Ways to quiet the pipes during the installation process, are to use plastic insulators and clips to reduce vibration. Problem areas are at the shower heads, where the drop ear 90 elbows are screwed into a wood header. Insulating the walls may help a "little" bit.
