gas water heater safety

We live in a 100 year old home and are about to remodel the kitchen. Currently, the gas water heater is located in the kitchen. We plan on purchasing a new one and need to put it in the attic. Our attic is very large so there is plenty of room. Our concern is that the entire house is built out of heart pine, and in the attic it is all exposed. My husband is wary of putting a gas water heater so near to exposed heart pine. But we dont want an electric one because of the inefficiency. What can we do? Is it dangerous to put it in the attic? And if so, is there anything we can do to make it safe?
