Craig:--You seem to have thought through this construction project quite well. A captive air storage tank for dometic water should have a draw down capacity of 40-50 gallons. A garbage disposer can be an additional burden on your septic system because of the additional water needed to convey the solids to the tank. Some of the newer 1.6gpf toilets turn in a credible performance, and will also take a load of your drainage field. Over sizing the hot and cold water lines and insulating them to the bathroom will provide better flow characteristics with less noise and frictional wear on the inside of the piping. If copper piping is to be used, be sure to install a sacrificial anode in the system to protect against pin hole leaks in the years to come.
