Thanks, Terry. No plywood here. The stone itself is 1 1/4 inches thick. Too thick! Called Pfister and they said it's been a problem. They suggested a "bevel" hole (wider than the mounting bracket) so the bolt can fit through. A plumber at the local store suggested cutting a bolt from thread stock, a little longer than the one provided. The bolt provided does come out. What would be missing here is I can only hand tighten the fashioned bolt, but I like it better than thinning down the stone countertop. Think I'll try this approach unless somebody has a better one. Thanks again.
