Help with capping some lines

I am remodeling my bathroom and I need to know a few things. I am going to install a pedestal sink, and my current sink, which is not a pedestal sink but a drop in sink, has three water lines. There is the standard hot/cold lines, then there is also an extra faucet that was probably for drinking water(didn't go through the softener). My pedestal sink only has holes for the standard hot/cold lines, which is fine with me since I don't really want to have that line anyway. What I need to do is cap that "drinking" line so that it doesn't stick out of the wall rediculously far. The pipe is the standard copper used for sinks and faucets. No plumbers in my area want to do this, as it won't pay well for them and they are extremely busy this time of year trying to beat the winter freeze. Please, help me and tell me the best way to proceed.
