At times when watering the garden we start out with great water volume and after a while we get zero water and the pressure gauge reads zero. Eventually, the water volume pressure/volume returns and will be fine. No consistency as to when it will happen.

Well is 300 feet deep and the pump control and motor are old......40 years I believe. Pulling the pump would be my last choice unless I am sure its bad.

Any ideas? Pressure switch? Pump control? Pump motor?

You can measure the current to the pump with a clamp-type ammeter. What happens can tell you if the problem is from running out of water or somethings else.

If it is running out of water, you can install a device in the power path that detects the current change and shuts down the pump for a while to let the water level recover.
