Weil mclain boiler hi limit problem

Greetings. I was having issue with boiler. I will leave Tstat set for 70 degrees. However my apartment would only reach 62. Baseboards are warm but not hot. I could hear gurgling in lines (knew system was air bound). I replaced vent on top of air scoop and changed out expansion tank.bled system.everything is fine except I had to increase aquastat from 180degree (factory setting) to 200 .previously at 180 degrees setting unit was shutting off at 160 (temp gauge reading)
Why did I have to increase hi limit to 200 degrees for boiler to shut down at 180 (temp reading) on dial.
Ps :today has been coldest in 5 years 2 degrees outside
