I am getting 2 new 55 gal water heaters installed in conjunction with a geo thermal heating system and it is my job to plumb them. I have a 3/4" supply so I'm guessing that's what I will need to supply the water heater with, however can a upsize to 1" coming out hot and back to the PEX manifold or will upsizing it be irrelevant ?

With 3/4" in you're sort of limited. And there is the restriction at the water heaters.
Most 75 gallon heaters come with 1" in and out.

yea, they do have 1" in and out but I can only go in with 3/4" due to supply from well. So is plumbing with 1" copper out to manifold a waste of money

Well..........anytime you increase sizing, you also reduce friction. Larger lines do give better flow.

And an expansion tank near the cold inlet would help with that too.

Do you have a pressure tank? Until you've exhausted that volume, a larger pipe would help. Once you're back to using the outlet of the pump, and the pressure tank is essentially exhausted, the larger pipe won't help, but it won't hurt.

i have a CSV system in place. So I'm running 3gpm @60lbs after raising pressure switch to 50\70 and increasing CSV to 60lbs. But after all this I plan on running 2 full baths and I'm not sure I'm gonna have enough volume , cold as well as hot.
