How much water should be left in the toilet tank when the flapper closes ? Thanks !

On any toilet after 1992, most of the water remains in the tank. Only a little bit leaves the tank. They are designed to flush with either 1.6 or 1.28 gallons, and not even all of that comes from the tank. Some comes direct from the fill valve into the overflow tube as it refills the bowl.

Most modern tanks use the 'water tank' effect to increase the force of the flush...the taller the tank, the more pressure, even when you do not use all of it on a flush.
