Current system:
2hp pump 450 deep in well
86g pressure tank with SquareD pump switch ~150' away in house.

Proposed system:
2hp pump 450 deep in well
1500g storage tank 75' from well (float switch to control 2hp pump filling storage tank)
1/2hp Goulds J5SH jet pump at storage tank
SqaureD pump switch located at jet pump
32g pressure tank 50' horizontal and 10' vertical away in the house.

Will this work, or am I going to have pump chatter?

Why am I doing this? I would like to keep everything possible inside the house (freezing, rats, mice, etc.)

Probably it will not work right. Move the pressure switch to the pressure tank, and that will work. An alternative would be to put a small pressure tank at the pump and have the bigger one indoors away from the pressure switch.

What keeps the storage tank, pump, and nearby plumbing from freezing?
