How much sand should I expect to pump out of my well? There is a ton of water and a moderate amount of sand coming out. I have now pumped about 12 gallons of water? Keep on a pumping?

Average house uses about 300 gallons per day. Irrigation systems use a lot more than that. You need to pump several times this amount to develope the well. You either pump it until it cleans up, or live with what you've got.
