Question about bathtub surrounds

We are starting the process of renovating our bathtub/ shower. I am looking to replace our bathtub surround, change out the fixtures, remove the shower doors, and add a permanent shower head - so I have several questions.

1) We have a glue-up wall right now, is it better to replace it with one that can be affixed to the walls or replace the surround with one that's direct-to-stud?

2) Our shower head attaches to a hose that is connected to the faucet. The shower head sits in a holder where it would normally go if it were a normal shower. Does that make sense? My question is, how difficult is that to remedy? Is it a DIY project or something for a professional? My husband and I have done work all over our house on our own and feel comfortable as DIYers.

3) We are taking the shower doors off as I believe shower doors are only useful in growing bacteria and mold in showers. Any tips on how to make sure we don't hurt our tub in the process?

Normally the surrond goes over a backer board.
There are kits that go to the studs, but those tend to be kits that also come with the tubs.

When the tub shower valve is replaced, it's and easy matter to run piping up for a shower head.
