Protecting Brick Inside Finished Walls

Hello-
Seeking some advice or suggestions.

I've completely stripped down a small bedroom in my house, revealing the raw brick that lay hidden behind the walls. As I proceed with the project, which involves insulating and adding new drywall, I would greatly appreciate a recommendation regarding the best approach to protect the brick from deterioration behind the new sheetrock. Should I consider painting or coating the brick? I was contemplating the use of closed-cell foam insulation, but I've heard concerns about potential problems such as moisture entrapment. Could DryLoc be a suitable alternative? My ultimate goal is to safeguard the mortar and prevent or slow its deterioration.
