Plate? For canopy covering/porch

Hello everyone,
I was asked to provide the height of the wall plate to attach a header to.
I wanted to attach to the height of the roof line but was told that couldn't happen. How would I get that measurement if all my walls are sheetrocked?

I would think you would measure from the floor to the ceiling and add the thickness of the ceiling material. Sheet rock is usually about 1/2 inch thick. Usually the ceiling joist are set on top of the top plate and the sheet rock is nailed directly to the ceiling joist.
