Switched out a lot of half inch copper with pex. Now to get a good temp of water in the tub... you have to have hot on max while cold is only a 8th of a turn on. The hot water itself is very hot. And nothing else is running and no cross connection.

Check your water heater settings. Are any of the sinks having this problem or is it just the tub?
Is the water flow out of the cold side coming out at the same rate as the hot side when valves are open fully (meaning could there be a kink in the cold side line)?

How hot is the hot water? A candy thermometer is good for measuring that.
