To supply a washing machine, I'd like to tie in to the supply for the shower rough-in.
Problem is galvanized supply disappears into wood over cinder block. I was thinking (before I took a good look) that I could cut the line before the rough-in and install tees. But then I realized that this is galvanized... might require threaded couplings... Any thoughts?

It will need to be cut and threaded for galvanized. That makes it a bit harder. I use a hand threader on those. You can rent them.

Well, I think I found an easier alternative, which is to tie into the line running the water heater (in the attic!). Anyway, there's PVC or whatever it is coming off the water heater, which is connected to galvanized pipe, all laid out clean the bar floor of the attic. Two questions: Can/should I replace the galvanized with PEX where I can -- and what the hell is this thing: (and why does it terminate to nowhere?)
