Help with Delta 600 valve replacement

Yes I twisted too hard and broke the tubes. I have a new valve and trim kit. The house was re piped about 3 years back using PEX with the crimp ringings. The old valve has copper top and bottom and PEX on the inlets. I want to use Sharkbites to make the repair. Look at the pictures and tell me. Do I cut the PEX close to the rings, will there be enough pipe left? Or should I Cut the PEX on the drop from the attic before it makes any turns and rebuild from there to the valve? Can I put the Sharkbites on the pipes and then thread them into the valve. Any suggestion on how or what order would be great. (Last picture in new valve.)

This is awkward, but...
