I have two case wall mount toilets which I have replaced the flush valves in both units but they still run water and do not shut off.Are there any adjustments?

The 1100 was an elongated floor toilet, you have 3100 Case toilets. But what is "not shutting off"? If the water continues to enter the tank, then you need the fill valve repair kit with a seat, plunger, and seal disc. IF the ball/flapper does not drop properly, then the problem is in the handle mechanism, and there are several places it can bind.
