Is it possible add copper stubs to an inline shut-off valve and then to cut into an existing copper line and add the pre-stubed valve by sliding repair couplings over the two joints? Is there an easier way to cut in a shut-off valve? Is a union more reliable than solder?

Using the repair couplings is entirely possible and, IMHO, probably the better way to go.

You STILL have to solder the unions, but they make it easier to "break" the pipe if your solder joints leak or something has to be done in the future.
