3" stack waste type of 90

Running a 3" drain from the 2nd floor into the slab then out to septic.

Do I just use a long sweep 90, street El, hub elbow, long turn

too many choices, which is the preferred foe waste line?

You can drop into the vertical pipe upstairs through a regular 90. Where the pipe goes into the slab, you'll need a sweep. Any horizontal turn you make below slab should be a long sweep if it's 90 degrees.

Horizontal to vertical can be a medium bend.
Vertical to horizonal needs to be a long turn bend. Long sweep.
