1/4" Compression Angle Stop

I've got a 1/4 Copper Stub Out that I ran 7 feet from a angle stop. The angle stop is in the *closed* position already.

The wall was shallow (furring strips) and the line itself was run just in base I decide to put secondary fridge there...
Can ya'll recommend a good way to finish it off ?

If there are any other better suggestions, feel free to recommend.
I'm thinking a 1/4x1/4 compression coupler with a cap on it.
or
Just affix a SS icemaker hose to it. Bundle the line and just *affix* the hose to the wall.....so it's there and also it also serves the purpose that says watch it.....1/4 copper stub in this area
