Kitchen (commercial type) Dish Sprayer

My sister had a commercial style dish sprayer in her prep kitchen that seems to work backwards...?

When the water is turned on the sprayer squirts wide open and when you squeeze the handle it shuts off...

Everyone I've ever seen works the opposite... You turn the spigot on and nothing is supposed to come out of the sprayer until you squeeze the nozzle...

Is there a way to fix this (reverse it) or is this how it's supposed to work?
