Hello!
I am currently renovating my bathroom. We removed the shower enclosure down to the studs. When we took off the old shower faucet and lever. I thought I set one part aside so that we would could remember what brand the old shower faucet was so that we could replace with a new one of the same brand. However, it seems to have been thrown out . I have two questions now. Should I replace the entire valve setup within the wall or should I just go with my original plan of buying a new faucet with the same brand?

Does anyone know what brand this valve is?

If your goal was minimal changes because the new valve might be identical...that doesn't work too often. With all of the room gutted, I'd just pick a new one that you liked, and deal with it. Once in awhile, the company still makes new trim that can be used in the old valve body, and if that's true, you can achieve like-new results with minimal changes, but on older valve bodies, your choices may not be great, if available at all.
