Sink drain pipe height

Hello,
I am adding a new toilet and sinks to an existing 3" drain in our shop. I've y-ed off that drain to 2" for the sinks, I will have 1 sink inside bathroom and 2 sinks out side that wall for dual shop sinks.

Is there a height the drain pipe should be at coming out of the wall to except the unions for the sinks?

Or does it depend on the sinks and theres not a specific height?

My existing bathroom has a pipe coming out of the wall for the sink at 9.5" to the center of the drain pipe.

The worksurface and the types of sinks determines the "optimum" drain height, but it is much better to err on the low side, rather than being too high.
